Ingredients
For Chicken Marination:
400g boneless chicken (breast or thigh), sliced
Salt to taste
Juice of Β½ lemon
1 tbsp ginger-garlic-green chilli paste
2 tbsp curd (yogurt)
ΒΌ tsp turmeric powder
2 tsp Kashmiri red chilli powder
Pinch of garam masala
1 tsp oil (or mustard oil for extra flavor)
For Gravy Paste:
4 ripe tomatoes
10β12 garlic cloves
2-inch ginger
1 green chilli
A few coriander stems
10 cashews (boiled or soaked)
1 tbsp Kashmiri red chilli powder
1 tsp coriander powder
Β½ tsp cumin powder
For Onion Masala:
3 onions
15β20 garlic cloves
1-inch ginger
2 green chillies
For Cooking:
2β3 tbsp butter + 1 tsp oil
Β½ tsp cumin seeds
1 small cinnamon stick
2 green cardamoms
ΒΌ tsp turmeric powder
1 tsp Kashmiri chilli powder
Salt to taste
Pinch of sugar
Hot water as needed
For Finishing:
2 tbsp fresh cream
2 tbsp butter
Pinch of kasuri methi (dry fenugreek)
Pinch of garam masala
Chopped coriander for garnish

Step 1: Marinate & Cook the Chicken
Mix the chicken with lemon, curd, spices, and oil. Let it rest for 10 minutes.
Optional: Skewer the pieces for easy flipping.
Sear on a hot pan for 2 minutes per side. Do not fully cook β let it finish in the gravy.
Step 2: Make the Gravy Paste
Blend tomatoes, garlic, ginger, chilli, coriander stems, cashews, and dry spices until smooth. No need to strain.
Step 3: Chop the Onion Masala
Finely chop the onions, garlic, ginger, and green chillies using a chopper or knife.
Step 4: Build the Gravy
Heat butter and oil. Add cumin, cinnamon, and cardamoms.
SautΓ© the chopped onion mix until golden (8β10 mins).
Add turmeric and chilli powder with a splash of water.
Stir in the tomato-cashew paste, season with salt, and cook for 10β12 minutes until thick and the oil separates.
Step 5: Add Chicken
Add seared chicken to the gravy.
Adjust consistency with hot water. Add a pinch of sugar.
Simmer for 4β5 minutes until chicken is fully cooked.
Step 6: Final Touch
Turn off the heat. Stir in cream, butter, kasuri methi, garam masala, and coriander.
Mix gently and serve hot.
