Beef Kefta with Veggie Pilaf

Ingredients :

For the beef:

  • 2 pounds ground beef
  • 2 teaspoons each fresh parsley & mint chopped
  • 1.5 teaspoons each smoked paprika & cumin
  • ¼ teaspoon cayenne pepper
  • 2 cloves garlic grated
  • ½ teaspoon dried thyme
  • Zest of ½ a Lemon
  • Kosher salt & black pepper
  • Avocado or grapeseed oil

For the yogurt sauce:

  • ¾ cup full fat Greek yogurt
  • 1 teaspoon each fresh parsley & mint chopped
  • Zest of half a Lemon
  • 1 tablespoon Lemon juice
  • 1 clove garlic
  • 1 teaspoon extra virgin olive oil
  • Kosher salt & black pepper

For the pilaf:

  • 2 medium size zucchini about 12 ounces
  • ½ a head of cauliflower
  • 1 pound of broccoli with stalks or 12 ounces of florets
  • ½ an Onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon mustard seeds
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon each fresh parsley & mint chopped
  • Zest and juice of half a Lemon
  • 2 tablespoons chopped pecans roasted if desired
  • Kosher salt & black pepper
  • Avocado or grapeseed oil

Instructions :

  • Cook 's notes: in this article, watch the video to see how to cut pilaf turkeys, coliflower, and broccoli. All is small and close in size, and thus cook uniformly.
  • Turn the pilaf into small, about the same sized pieces by cutting the courgettes, coliflowers, and broccoli so they don't use too much stalk. Preheat a big and broad pot for 2 minutes over medium heat. Add two tea cubes of oil to the pan and add a few cracks of pepper to the oignon, garlic, mustard, pepper-red flakes, 1 1⁄4 teaspoon salt. Mix well and stir regularly for 6 minutes. Apply the cut zucchini, Chocolate flowers and broccoli to the bath, 1/2 salt teaspoon and some pepper crumbs. Mix well and put the cap on the oven. If you don't have a cap, you can also use a boot cloth to cover the oven. Stirring several times, cook for 10-12 minutes. When they have softened up, the vegetables are ready but they still have a crunch. Turn the fire off the pot and blend well with persil, mint and citrus fruits and juice, and pecans. You can need extra Lemon juice or salt for seasoning. Set aside. Set aside.
  • For a beef kefta, add 1 tea cubit of salt and a few cracks of potato into a large cup, along with the remaining ingredients (not oil). Using your hands well to blend it all. See the video to find out how I do it by taking a little meat and molding it like log or soccer. You are having 14-15 kefta with enough meat. Preheat a big kettle, ideally cast iron for 2 minutes over medium-high heat. Put 2 teaspoons of oil on to the pot and wait thirty seconds to steam the oil and add half the kefta to the pot. Cook 3-4 minutes or flip and cook for 3-4 minutes until well browned. When browned on both ends, the kefta must be cooked 30 seconds on the ends, to cook through them. It is necessary to prevent over-cooking kefta if you do not know that kefta has been finished, cut it one in half and check it otherwise. Take kefta out of the pot, add some additional oil and cook the second package.
  • As the kefta cooks, mix all the food in a bowl and whisk well to create yogurt sauce. Seasoning inspection and modification if necessary.
  • Serve the kefta with a little Sauce of yogurt and pilaf. You can freeze the kefta for 2 to 3 months and everything stays in the refrigerator for 5 days, but I do not suggest freezing the vegetables as they are very soft and watery. If you use a microwave, cover the pan with a towel of wet paper in a 400-foot oven for a time of 10 minutes, and make sure that the beef is not overheated, when it dry.
