I still went to college in Chili, but there's no restaurants left in Chile right now where I live! With the simple Monterey chicken, I am completely loaded with the toppings, I fulfill my Chili 's desires. This is a perfect way to jazz on old breasts of chicken.

How to make Monterey chicken

This recipe start with Chicken breasts seasoned to perfection in gold brown. I always use small, Chicken breasts when I'm looking for a quick meal. The cook time can vary according to how thick your Chicken is. The Chicken is wrapped and filled including toppings, including your favorite barbecue sauce.

I use Monterey Jack shredded and cheddar cheese for the toppings and melt them into the stove until delicious and cold. You can use any kind of cheese that you want, mozzarella is also a good option.

The bacon, tomatoes and green onions follow that, which take the Monterey Chicken very smart!

This dish I love because it's not difficult to make than a regular hip chicken, but something special. I like it. I serve a Chicken with a green veggie at my Monterey side to finish my meal with mashed potatoes or rice.

Ingredients :

  • 4 boneless skinless Chicken breasts
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 cup barbecue Sauce
  • 1 cup shredded cheese I used a blend of Monterey Jack and cheddar cheese
  • 4 slices bacon cooked and crumbled
  • 1/2 cup diced tomatoes
  • 1/4 cup green onions

Instructions :

  • Olive oil heat over medium heat in a big, healthy oven. To 400 degrees, preheat the oven.
  • Add salt and pepper to the Chicken on both sides.
  • Bake the Chicken on either side for 4-5 minutes, or until done. Cook time can vary according to your chicken's thickness.
  • Sprinkle the Chicken with the BBQ sauce. Put over any Chicken breast 1/4 cup of cheese.
  • Put the pan in the microwave, or until the cheese is melted for 3-5 minutes.
  • Sprinkle over the Chicken and serve with bacon, tomatoes and green onions.
