I had no choice but to share with you the Low Carb recipe. The trick to this process is to cover the crumbs of panko with split pork rinds! It is low sugars, salty and crooked. How Do I Make Low Carb Coconut Shrimp?

Ingredients :

For the shrimp:

  • 1 pound Shrimp peeled & cleaned
  • ¾ cup all-purpose flour
  • 1 teaspoon each Onion & garlic powder
  • 2 Eggs lightly beaten
  • ½ cup each panko breadcrumbs & unsweetened shredded coconut flakes
  • Kosher salt & fresh pepper
  • Avocado or grapeseed oil
  • ½ cup full fat mayonnaise
  • Zest & juice of half a lime
  • 1 clove garlic finely grated
  • 2-3 tablespoons sriracha or hot Sauce

For the Keto coconut shrimp:

  • ¾ cup coconut flour
  • 1 teaspoon each Onion & garlic powder
  • 2 Eggs lightly beaten
  • ½ cup each pork rind crumbs & unsweetened shredded coconut flakes
  • Kosher salt & fresh pepper
  • Avocado or grapeseed oil

Instructions :

  • Prepare a dredge station for Keto coconut Shrimp by applying the coconut meal, Onion & garlic pulp, 1⁄2 tea cubicle salt and a few pepper cracks to a small bowl. Attach the Eggs and gently stir in a shallow cup. Attach the pork rinds to a zip bag and slip them onto breadcrumbs of panko size with a rolling pin. Add them and the Cocoa flakes, 1⁄4 teaspoon cinnamon, a few pepper cracks and blend well. Stir together.
  • Shake the Shrimp on the bot sides with a little bit of salt then dredge in the Cocoa flour, shake off any surplus, drag into the eggs, shake any excess, dredge the pork rind and the coconut flakes. Shift Shrimp over a sheet tray to a wire rack. The rest of the Shrimp replay the process.
  • For your standard recipe, follow almost the same directions, except instead of coconut, use all-purpose flour and panko breadcrumbs rather than pork shavings.
  • In a jar, pour 2 centimeters of oil and carry to 340-350 F. When the oil levels are getting, it is fine that the Shrimp are so tightly stuck at room temperature. Bake the Shrimp in batches on each side for around 2 to 3 minutes, or to brown color. Remove Shrimp and put it on a clean wire shelf.
  • Mix all of the ingredients in a little bowl and whisk the sriracha dipping sauce. Season, if you like it spicy, you may need more sriracha.
