Lemon-Ricotta Cornmeal Waffles

Ingredients :

  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • ¼ cup white Sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup half-and-half
  • ½ cup ricotta cheese
  • 2 large Eggs
  • 2 tablespoons melted butter
  • 1 teaspoon Lemon extract
  • 1 serving cooking spray

Directions :

  • Checklist of instructions
  • Preheat the waffle iron as directed by the producer.
  • In a large mixing bowl, whisk flour, maize meal, sugar, bakery powder, bakery and salt together.
  • Whisk together in a separate bowl half-and-a-half ricotta, Eggs , butter melted, and Lemon extract until smoosth. Put in the meal mix and mix together thoroughly.
  • Coat with the cooking spray the preheated waffle iron. Pour batter into waffle iron in batches and cook until crisp and golden brown and the iron stops steaming, about 5 minutes.

Cook's Note:

  •   emulsion from Lemon bakery can be substituted with extract of Lemon where desired.
