The baked bite is loaded with cheddar, sour cream, crispy bacon and green oignons. You make a great snack or a great appetizer!
- 2 lbs. potatoes, I used 3 large potatoes
- 6 slices of bacon, cooked, drained & chopped (reserve 1 tablespoon of the bacon grease).
- 2 cups medium cheddar cheese, shredded
- 4 green onions, chopped
- salt & pepper to taste
Oven to 375 degrees preheat. Preheat. Clean cookie sheet with reserved bacon fat really lightly. Or you could spray it to save a few calories using cooking spray.
Clean and sliced, 1/4 to 1/8 inch thick potatoes. On the thick side, I like them best
In a large pot put the potato slices, cover with boiling and cook until boiling. Boil, depending on the thickness of your potatoes, for around 5 minutes or less. You don't want them to be cooked, and you definitely still want them to be firm or break up.
