This meatloaf recipe from actress and Celebrity Masterchef winner Sophie Thompson is a hit. Made with ground beef and b, it's moist, spicy and totally delicious hot or cold.
Ingredients :
- 500g of beef mince
- 500g of beef mince
- 1 tbsp of vegetable oil
- 1 large
- 1 large
- 1 celery stick
- 5 garlic cloves
- 1 tbsp of thyme leaves, finely chopped
- 4
- 1 tbsp of Dijon mustard
- 2 tbsp of ketchup
- 2 tbsp of Worcestershire
- Tabasco, a dash
- 1/2 tsp grated nutmeg
- 1/2 tsp cayenne pepper
- 1/4 tsp allspice powder
- 4 sun-dried tomatoes, in oil
- 125g of breadcrumbs, fresh
- 10 rashers of smoked streaky bacon
- 4 savoy cabbage leaves
- salt to taste
Method :
- Preheat oven to 200°C/180°C fan/Gas 6
- Heat the oil in a large pan and add the onion, carrot, celery and garlic. Cook gently for about 10 minutes until softened. Add the thyme and continue cooking for a few more minutes. Pour into a shallow bowl and set aside to cool.
- In a large bowl, combine eggs, Dijon mustard, ketchup, Worcestershire sauce, Tabasco and spices. Finely chop the sun-dried tomatoes (you'll need the oil from the jar later) and add them to the bowl. Season with salt and pepper. Add the beef and beef mince and breadcrumbs, then the cooled vegetables. Use your hands to mix everything together.
- Lightly oil a 1kg loaf pan with a little sun-dried oil, then use the bacon to line the bottom and sides of the pan. Fill the loaf pan almost to the top with your magic meat mixture, pressing it down well, and turn the bacon that sticks out over the top. Cover the top of the pan with a piece of parchment paper and secure it with a string.

- Place the loaf pan in a deep roasting pan and fill it halfway with boiling water. Carefully transfer to the oven and bake for 1 hour and 15 minutes.
- Remove the loaf pan from the pan and set the hot water tray aside for now. Carefully remove the parchment paper and drain the liquid from the loaf pan. Preheat the grill to high. Turn your loaf onto a lightly oiled baking sheet and place it under the broiler for 8-10 minutes, or until the bacon is golden brown.
- Meanwhile, take your Savoy cabbage leaves and cut off the center stalk. Place the leaves in a pan of hot water and let them soften for a few minutes. Drain them on paper towels and arrange them on a nice serving dish. Place the meatloaf on the leaves.
