Ingredients :

  • 2 tbsp olive oil
  • 1 lb boneless skinless Chicken breasts
  • 3 celery stalks, chopped
  • 2 carrots, chopped
  • 1 yellow onion, diced
  • 2 sprigs fresh rosemary, finely chopped or 1 tsp dried
  • 3 sprigs fresh thyme, finely chopped or 1 tsp dried
  • 4 cloves garlic, minced
  • 1 tbsp Lemon juice
  • 1 tsp freshly grated Ginger or 1/2 tsp dried powdered Ginger
  • 1 tsp Lemon zest
  • 1 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 cups Chicken broth
  • 1 cup dry mini pasta shells or another small pasta shape such as macaroni
  • 1/4 cup fresh chopped parsley or 2 tsp dried
  • Instructions :

    • In a big Dutch oven heat olive oil or pot on the burner. Attach breasts of chicken, season with salt & pepper and sear each side for 2-3 minutes, then remove from the heat until slightly browned. Attach celery, carrots, onions, sautee for 3-4 minutes, and scrape any Chicken pieces from under the pot, without washing the pot cleanly.
    • Add the rosemary, thyme, garlic, ginger, zest, lemon, salt, pepper and turmeric back to the bowl, and cook for another minute before perfume. To taste it, add Chicken to the bowl.
    • Bring to a boil and stir for 20 minutes, pour into the Chicken broth. In the last 10 minutes of cooking, add pasta and stir until pasta is cooked.
    • Remove the broth of Chicken and chop with two forks, then return to the dish. In a cool pink mix, serving and enjoying!
